1 quart chicken stock or broth
2 carrots, peeled and chopped
1 yellow onion, peeled and chopped
1 cup smooth peanut butter
1 cup whipping cream or half-and-half
1/2 cup dry roasted peanuts
salt and pepper, to taste
Tabasco sauce, to taste
Combine the stock, carrots, and onion in a large saucepan over medium-high heat. Bring the stock to a boil then reduce the heat to a simmer. Cook, covered, for 15 minutes or until the carrots are soft.
Transfer the mixture to a blender or food process. Puree until smooth then return the soup to the saucepan. Add the peanut butter, whipping cream, and peanuts. Bring to a simmer over medium heat. Add salt, pepper, and Tabasco, as desired. Serve hot.
