Ingredients:
1 package Mediterranean curry couscous mix such as Near East, 5.7 ounce size
1 can (14.5 oz size) no-salt-added diced tomatoes -- undrained
4 cups water
1/2 cup diced zucchini
1 teaspoon curry powder
1/4 teaspoon salt
1/4 cup almonds -- toasted

Directions:

Combine couscous mix and seasoning packet, tomatoes, and next 4 ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5 minutes. Top with almonds. Serve immediately.
