ingredients
1 package (5.7 ounce size) Mediterranean curry couscous mix, such as Near East
1 can (14.5 ounce size) no-salt-added diced tomatoes, undrained
4 cups water
1/2 cup diced zucchini
1 teaspoon curry powder
1/4 teaspoon salt
1/4 cup almonds, toasted
directions
Combine couscous mix and seasoning packet, tomatoes, and next 4 ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 5 minutes.
Top with almonds. Serve immediately.
