Ingredients:
1 1/2 cup Cooked yams or sweet potatoes -- puree
1 1/4 cup Sugar
1/2 cup Butter or margarine -- melt
1/4 cup Evaporated skim milk
3 Eggs
1 teaspoon Ground nutmeg
1 teaspoon Vanilla
3/4 teaspoon Lemon extract
1 Unbaked deep-dish pie shell (9" size)

Directions:

Preheat oven to 350 F. In processor combine all ingredients except crust. Process until well-blended.

Pour into unbaked pie shell. Bake for 50 to 55 minutes or until knife inserted in center comes out clean and pie is golden-brown.
