The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

1 cup old-fashioned rolled oats
1 3/4 cup boiling water
1/2 cup butter or margarine, at room temperature, cut into chunks
1 cup packed light brown sugar
1 cup granulated sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
2 teaspoons unsweetened cocoa powder
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 package (12 ounce size) semisweet chocolate chips
1 cup walnut or pecan pieces
In large bowl, mix oats and boiling water until blended and let stand 10 minutes.
Add butter and sugars to oat mixture and stir with wooden spoon until butter is melted. Briskly stir in eggs and vanilla. Add cocoa powder, flour, baking soda and salt and stir to combine. Stir in half of the chocolate chips.
Pour batter into greased and floured 9x13-inch baking dish. Sprinkle remaining chocolate chips and nut pieces evenly over top of batter.
Bake cake on middle rack at 350 degrees F until wood pick inserted in center comes out clean, about 35 minutes.

The cake is very easy to make. I substituted whole wheat flour for the all-piurpost flour and dark chocolate chips for the semi-sweet. I tested it on my family and they loved it. I look forward to taking it to work for a co-workers birthday knowing it will be enjoyed.
