A simple skillet dinner. Made with very tasty and tender turkey meatballs made from scratch, bell peppers, tomatoes, and penne pasta.

ingredients

12 ounces ground turkey
1/2 cup whole-wheat bread crumbs
1 1/2 teaspoon onion powder
1 teaspoon fennel seeds, crushed
1/2 teaspoon garlic powder, divided
1/4 teaspoon salt, divided
1/8 teaspoon crushed red pepper flakes
2 tablespoons water
non-stick cooking spray
2 cups red and green bell pepper strips
14 1/2 ounces canned tomatoes, broken up
1 teaspoon crushed dried oregano
8 ounces penne, cooked (or other tubular pasta)

directions

In a large bowl, combine turkey, bread crumbs, onion powder, fennel seeds, half the garlic powder, salt, red pepper flakes and water. Form mixture into 1-inch meatballs.

Coat a large skillet with nonstick cooking spray. Add meatballs and cook, turning occasionally, 8 to 10 minutes, or until well-browned and cooked through. Remove skillet from heat. With slotted spoon, remove meatballs.

Spray skillet again with cooking spray. Add peppers and cook, stirring, about 5 minutes, until crisp-tender. Stir in tomatoes, oregano and remaining garlic powder.

Return meatballs to skillet and bring to a boil. Reduce heat and simmer about 5 minutes, or until sauce has thickened and meatballs are heated through.

Serve with cooked pasta.

    We enjoyed this recipe a lot! The meatballs had good flavor and texture. Some turkey meatball recipes don't end up with a good consistency because of the lean meat but these held their shape well. There wasn't really much sauce so I ended up adding some tomato sauce just to give it something to coat the pasta a bit.
