ingredients
2 teaspoons melted butter or margarine
1/2 cup chicken broth
1 large apple, cored and chopped
1/2 cup chopped onion
1 stalk celery, chopped
1 cup whole berry cranberry sauce
3/4 teaspoon poultry seasoning
2 cups seasoned crumb-style stuffing mix
2 1/2 pounds turkey breast cutlets
directions
Combine butter, chicken broth, apple, onion, celery, cranberry sauce, poultry seasoning and stuffing. Place 3 tablespoons stuffing mix on each turkey cutlet.
Roll up and tie. Place in crockpot. Cover; cook on LOW 8 hours (HIGH 4 hours).

Should the crumb-style stuffing be mixed in the bowl with the other ingredients? The recipe never says.

This recipe has problems: 1. Cooking for 4 hours on high turned it into a congealed mess of too much cranberry sauce blackened in the crockpot, mushy stuffing and chicken that is hard on the outside. Next time I will try to cook only 2 hours or less on high. 2. Too much cranberry sauce, it overwhelms the stuffing. I will cut it in half 3. Tying off cutlets was next to impossible. I ended up layering the chicken with the stuffing mix as it all came out of the chicken anyway. Now, having said all of this, since I had some leftover potatoes and gravy from a previous dinner, I served the cranberry-apple mess on top of the mashed potatoes followed by the gravy and taste-wise, it tasted pretty good! That's why it got a 4 stars. This recipe has potential but you'll have to work for it! :o)
Did you make this with chicken or turkey? Turkey cutlets are usually thinner and more pliable than chicken (in my experience anyway) so that may be why you had problems. If not, then pounding the poultry thinner makes it easier to roll up. I'm guessing since you had to alter the cooking method is why it didn't quite turn out as you expected. Also, crock pots all cook a bit differently so you may have to adjust the cooking time or heat level based on your experience with your exact model. Some crock pots cook too hot on high to use it for most recipes. Some people find they need to use the low setting for recipes calling for "high" and the warm setting for "low" temperature.
This is the identical recipe to the one in the booklet that came with my crockpot. The ingredients sound really good, but the instructions are horrible. The mixture should make quite a bit more than what is required to stuff the cutlets, but there's no indication that the mixture is solely for stuffing the cutlets or what you should do with the remainder.
There really isn't any extra stuffing, you shouldn't have much leftover when divided among 2 1/2 pounds of cutlets (which should be about 8 cutlets).
