Chocolate Chip Pecan Pie Bars

ingredients
CRUST
1 1/2 cup all-purpose flour
1/2 cup butter, softened
1/4 cup packed brown sugar
FILLING
3 large eggs
3/4 cup corn syrup
3/4 cup granulated sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 package (12 ounce size) chocolate chips, milk chocolate or semisweet
1 1/2 cup coarsely chopped pecans

Preheat oven to 350 degrees F. Grease a 9- x 13-inch baking pan.
For the crust: combine the flour, butter, and brown sugar in a mixing bowl and cream together until the mixture is crumbly. Pour the mixture into the prepared pan and press to form a crust on the bottom of the pan.
Place in the oven and bake for 12-15 minutes or until lightly browned. Remove from oven.
For the filling: Combine the eggs, corn syrup, sugar, butter, and vanilla in a bowl with a wire whisk until the mixture is well mixed. Stir in the chocolate chips and chopped pecans.
Pour the filling into the baked crust. Return the pan to the oven and bake at 350 degrees F for 25-30 minutes or until set in the middle.
Remove from the oven and place the pan on a wire rack to cool. When cool, cut into squares. Store in an airtight container.

These were delicious! VERY rich though. I'm going to freeze half of what's left since we cut them into rather small bars to serve because they are very filling and rich. Would be too tempting to eat them all if I leave them out!

Think MiMi's Restraunt and their fab chocolate pecan pie...warm, rich, fantastic. Now combine that with ease of serving and traveling and you have this dish. It easily can be made into 2 8x8's or doubled. Simple ingredients transform family faces into indulgent smiles!!
