ingredients
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 teaspoon sugar
2 tablespoons melted butter
2 cups buttermilk
1/4 cup chopped pecans
1 cup mashed cooked sweet potatoes
1 teaspoon nutmeg
2 teaspoons cinnamon
2 egg yolks
2 egg whites, well beaten
directions
Mix together all ingredients except egg whites. Fold in egg whites.
DO NOT over mix; let it be "lumpy". Fry in medium hot iron skillet in small amount of butter or light oil until golden brown.
