1 round or oblong French or Italian bread loaf
1/3 cup light mayonnaise
3 tablespoons prepared pesto sauce
1 teaspoon fresh lemon juice
1 1/4 pound thinly sliced deli roast beef
1 jar (7 ounce size) roasted red peppers, drained well
3 cups mixed baby lettuce and spring salad greens
1/2 cup crumbled mild feta or goat cheese
black pepper
Slice the bread in half horizontally. Scoop out the center of the bread of each half, leaving about a 1 inch thick outer shell.
Combine the mayo, pesto, and lemon juice and spread on the cut out sides of the bread halves.
On the bottom half of the bread, layer the roast beef, red peppers, salad greens, and cheese. Season with black pepper if needed.
Top sandwich with remaining bread. Cut into wedges to serve.
