Peanut butter and bananas are nestled in a grilled sandwich, perfect for a snack, lunch, or even breakfast.

2 tablespoons peanut butter
4 slices bread
2 bananas, peeled
2 eggs, beaten
1/3 cup milk
1/2 teaspoon vanilla extract
1 pinch ground cinnamon
1 pinch salt
2 teaspoons butter
Spread one side of each slice of bread with peanut butter. Slice the bananas and place on half of the peanut butter spread bread slices. Top with remaining bread slices.
Whisk together the eggs, milk, vanilla, cinnamon, and salt in a shallow dish.
Heat the butter in a skillet over medium-high heat.
Dip each sandwich in the egg mixture, coating all sides and letting any excess drip off. Place in the hot skillet. Cook for 3-4 minutes per side or until browned.
Serve immediately, sprinkled with powdered sugar if desired.
