It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Bake up a moist and flavorful applesauce fruitcake filled with candied fruits and chopped nuts. Applesauce keeps the fruitcake moist without all the calories of full-fat fruitcakes.
2 cups sugar
1 cup shortening
3 cups unsweetened applesauce
4 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
4 teaspoons allspice
1 tablespoon jam (any fruit)
4 cups flour
1/2 teaspoon salt
2 teaspoons soda
2 eggs
1/2 pound candied pineapple
1/2 pound candied cherries
1 pound candied mixed fruits
1 pound chopped dates
1 cup raisins
2 cups chopped walnuts
Combine all ingredients except fruits and nuts and mix until smooth.
Stir in fruits and nuts. Line the bottom of two loaf pans or one tube pan with well-greased and floured double-thickness brown paper or parchment.
Bake at 300 degrees F for one hour (test for doneness with a toothpick).

great flavor and texture, baking tme was shown as 1 hour, but should have been 2 1/2 hours
