Vienna Apple Cake

ingredients

1 egg yolk
2 tablespoons cold water
1 dash salt
1/2 lemon, juiced
1/2 cup butter
1 cup sifted flour
1 teaspoon baking powder
3 large apples
1/4 cup raisins
1/3 cup almonds
1 egg, beaten
1 teaspoon lemon extract

directions

Beat together egg yolk, water, salt and lemon juice. Cream butter, blend into first mixture, add flour. Divide dough in half. Roll one piece out thin and fit into greased pan, 12 x 6 inches.

Peel and core apples and chop fine with raisins and almonds. Spread mixture over dough in pan, top with remaining dough rolled out thin. Brush with beaten egg.

Bake in a 400 degrees F oven for about 45 minutes.
