Sock It To Me Cake

This classic coffee cake is filled with pecans, brown sugar, and cinnamon and drizzled with a sweet glaze.

Cake

1 box (15-17 ounce size) butter cake mix
1/2 cup sugar
3/4 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
8 ounces sour cream
1/2 cup chopped pecans

Filling

2 tablespoons brown sugar
2 teaspoons ground cinnamon

Glaze

1 cup confectioners' sugar
3 tablespoons milk, orange juice or lemon juice

directions

Preheat oven to 350 degrees F. Grease a tube pan.

In a mixing bowl, combine the cake mix, sugar, and oil an mix until just blended. With the mixer running, add the eggs one at a time. Mix until incorporated.

Add the vanilla and sour cream to the batter and mix well. Stir in the pecans by hand.

Pour half of the cake batter into the prepared tube pan.

In a bowl, mix the brown sugar and cinnamon until blended. Sprinkle the mixture over the cake batter in the pan.

Gently pour the remaining cake batter into the tube pan over the cinnamon and sugar layer. Do not stir.

Place the tube pan in the oven and bake at 350 degrees F for 60-65 minutes or until the cake tests done with a toothpick.

Meanwhile, in a small bowl mix together the confectioners sugar and milk (or juice) until smooth. Set aside.

When the cake is done, remove from the oven and let cool on a rack in the pan for 5 minutes.

Place a piece of waxed paper under the cooling rack. Invert the tube pan onto a plate and remove the cake. Invert the plate onto the cooling rack so the cake is right-side up again.

While the cake is still warm, drizzle with the glaze. Let the sock it to me cake cool completely before slicing and serving.

Store any leftover cake in an airtight container.

    I have made this cake twice but it has fell before I took it out of the oven both times. I even added baking powder the second time. What is the problem? I am an experienced baker.It was a delicious tasting cake.

    • Maybe try a different brand of cake mix? I also wouldn't add baking powder. Too much can cause a cake to fall too.

    The first time I made this cake it came out PERFECT. I’ve made it at least 6-7 times since and it always falls before it’s done. It’s still a great tasting cake, but the presentation isn’t there. (It does help to keep it upside down) Also the recipe calls for the cake box to be 18+ oz (can’t remember exact) but box cake mix is now 15+ oz these days. I have used two boxes to measure out what recipe requires, and still it falls.

    • You might want to invest in an oven thermometer to find out how off your oven temperature is. Once you know that you can more easily adjust the oven temperature so that the cake won't dry out next time.

    I haven't tried the cake yet,but was wondering if you can omit adding the half cup of sugar. I find boxed cakes sweet enough

    • The addition of the sour cream is going to reduce the sweetness of the cake so you might want to keep the sugar in.

    • Look for "butter golden" or "butter recipe". I know Duncan Hines makes one.

    I plan to try this cake. But I see that the box size is 18.25 oz. I have a Betty Crocker box but the size is 15.25. If 18.25 is what I need, can you recommend a brand?

    • The recipe calls for a tube pan but you can use a bundt pan if don't have a tube pan.
