White Chocolate Cheesecake Cupcakes

ingredients

1 box (18.25 ounce size) supermoist white cake mix, plus ingredients to prepare
1 cup sour cream (light or regular)
1 package (3.4 ounce size) instant cheesecake pudding mix
1 cup Ghirardelli white chocolate chips

directions

Prepare the cake mix as directed on the box. Add the sour cream to the batter. Add in the dry contents of the pudding (unprepared) and mix well. Stir in white chocolate chips.

Line muffin pan with liners and fill 2/3 full with the batter.

Bake as directed on the cake mix box. Let cool.

Frosting Options: You can frost using your favorite basic frosting. A cream cheese or butter cream frosting is nice. The cupcakes are also delicious without frosting.

cook's notes

Fancy it up a bit by adding a 1 or 2 teaspoons of flavored extract to your frosting. A raspberry extract is nice or just plain vanilla extract. Start with just a little bit and add more to achieve your taste preference. Need it to be a little more fancy? Top off the frosted cupcakes with sprinkles, colored sanding sugar or a birthday candle.
