Filled Rich Chocolate Cupcakes

What's better than a chocolate cupcake? One that's bursting with a rich, chocolatey cream cheese filling.

ingredients


Filling

1 package (8 ounce size) cream cheese, softened
1/3 cup sugar
1 egg
1/8 teaspoon salt
1 cup semi sweet chocolate chips, melted and cooled

Cup Cakes

3 cups all-purpose flour
2 cups sugar
2/3 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2/3 cup vegetable oil
2 tablespoons white vinegar
2 teaspoons vanilla extract

directions

Preheat the oven to 350 degrees F. Line a muffin tin with paper liners.

Prepare the filling by combining the cream cheese, sugar, egg, salt, and melted chocolate in a mixing bowl. Beat on medium speed with an electric mixer until smooth and creamy. Set the filling aside.

In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. Add the water, oil, vinegar, and vanilla. Beat on medium speed with an electric mixer for 2 minutes.

Fill the muffin cups 2/3rds full with batter. Spoon 1 tablespoon of filling into the center of each cupcake.

Place the cupcakes in the oven and bake at 350 degrees F for 20 minutes, or until the cake part of the cupcake is done.

Remove the cupcakes from the oven and let cool completely before frosting as desired. Store the cupcakes in an airtight container.
