Beer Cheese Cupcakes
1 cup good quality beer
9 tablespoons unsalted butter
1 cup grated sharp cheddar cheese
2 cups brown sugar
3/4 cup sour cream
2 eggs
1 tablespoon vanilla extract
2 cups flour
2 1/2 teaspoons baking soda
Cheddar Cheese Frosting
8 ounces cream cheese, room temperature
1/4 cup unsalted butter, room temperature
4 cups powdered sugar
3/4 cup grated cheddar cheese
1 cup chopped, cooked bacon, well drained and dried on paper towels

For Cupcakes: Place cupcake liners in a cupcake pan.
Place the beer in a saucepan over medium high heat and bring to a simmer. Add the butter and stir until melted, then stir in the cheddar. Remove from heat and stir in the sugar until completely blended.
Whisk the eggs and sour cream in another bowl until smooth. Whisk in the vanilla until mixed. Combine the egg mixture with the cheddar mixture until combined.
Sift together the baking soda and flour. Gently combine the flour mixture and the egg mixture, folding the ingredients together to just mix. Do not over-mix.
Fill cupcake liners 3/4 full. Bake at 350 degrees F for 25 minutes, or until a toothpick comes out clean when inserted in the middle of a cupcake.
For Frosting: Whip the cream cheese and butter with a mixer until smooth and fluffy. Mix in the cheddar. Add the powdered sugar in half-cup increments until well combined. Stir in the bacon pieces by hand.
You can decorate as desired, or tint the frosting to match your team's colors.
