Garlic Marinated Cauliflower And Vegetable Salad

ingredients
1 large cauliflower, cut into florets
2 teaspoons garlic, minced
1 tablespoon red wine vinegar
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 cup zucchini, cut in half lengthwise, and thinly sliced
1/2 cup green bell pepper, cut in half lengthwise, and julienned
1/2 cup red bell pepper, cut in half lengthwise, and julienned
1/2 cup yellow or orange bell pepper, cut in half lengthwise and julienned
3/4 cup red onion, cut into half moons
2/3 cup black olives, each cut from end to end into 6 pieces
1/4 cup freshly chopped Italian parsley
1 tablespoon capers
directions
Steam cauliflower until al dente, about 3-5 minutes, and transfer to a bowl.
Meanwhile in a small bowl, whisk together garlic, red wine vinegar, olive oil, salt, and pepper and set aside. Gently toss steamed cauliflower with remaining ingredients and dressing. Let salad marinate for 30 minutes before serving.
