This triple lemon cake is the perfect dessert for any occasion. The lemon cake mix is combined with lemon gelatin and the warm cake is drizzled with a lemon glaze for the ultimate lemon flavor.
1 box lemon gelatin
1 cup hot water
1 box (18.25 ounce size) lemon cake mix
3/4 cup oil
4 eggs, lightly beaten
2 tablespoons fresh lemon juice
Glaze
1 cup powdered sugar
2 tablespoons fresh lemon juice
Preheat the oven to 350 degrees F. Grease a 9x13 baking pan.
Combine the gelatin powder and hot water in a large bowl. Mix well until the gelatin dissolves then let the mixture cool completely.
When the gelatin liquid is cool, stir in the cake mix, oil, eggs, and lemon juice. Mix well.
Pour the cake batter into the prepared baking pan. Place the pan in the oven and bake at 350 degrees F for 30 minutes or until the cake springs back lightly when touched.
Remove the pan from the oven and place on a wire rack.
Immediately prepare the glaze by combining the powdered sugar and lemon juice and mix until it is a drizzling consistency. Evenly pour the lemon glaze over the hot cake.
Let the cake cool completely before serving. Store the cake at room temperature in an airtight container for up to 4 days.

You should be able to bake it in a Bundt pan (you'll have to adjust the cooking time - if your cake mix has Bundt instructions then follow those)

What size box of lemon gelatin?
When a recipe doesn't list a package size it's usually safe to assume it's the most common size available. In this case, the smaller boxes of gelatin are the most common so you should use that.

I have been making this lemon jello cake since 1962 or 1963! It is a family favorite. It is so easy to make and it tastes delicious.

This recipe it delicious- I don't use juice from a lemon in the mix but for the glaze I do. It is great for a hot day.
