ingredients

1 box lemon gelatin
1 cup hot water
1 box (18.25 ounce size) lemon cake mix
3/4 cup oil
4 eggs, lightly beaten
2 tablespoons fresh lemon juice

Glaze

1 cup powdered sugar
2 tablespoons fresh lemon juice

directions

Preheat the oven to 350 degrees F. Grease a 9x13 baking pan.

Combine the gelatin powder and hot water in a large bowl. Mix well until the gelatin dissolves then let the mixture cool completely.

When the gelatin liquid is cool, stir in the cake mix, oil, eggs, and lemon juice. Mix well.

Pour the cake batter into the prepared baking pan. Place the pan in the oven and bake at 350 degrees F for 30 minutes or until the cake springs back lightly when touched.

Remove the pan from the oven and place on a wire rack.

Immediately prepare the glaze by combining the powdered sugar and lemon juice and mix until it is a drizzling consistency. Evenly pour the lemon glaze over the hot cake.

Let the cake cool completely before serving. Store the cake at room temperature in an airtight container for up to 4 days.

this is one of my favorite recipes! thanks for posting. Has anyone done it in a bundt pan?

    • You should be able to bake it in a Bundt pan (you'll have to adjust the cooking time - if your cake mix has Bundt instructions then follow those)

My Mother in Law gave me this recipe in the early 60's. I lost it and have been trying to find someone who knew it ever since. Thank you.

What size box of lemon gelatin?

    • When a recipe doesn't list a package size it's usually safe to assume it's the most common size available. In this case, the smaller boxes of gelatin are the most common so you should use that.

Lovely citrus flavors. It really is good both hot and cold too. It's not too sweet like some lemon cakes are.
