Casserole Of Rice And Peas With Onions, Bacon And Tomatoes

ingredients
1 cup rice
1 can (10.5 ounce size) chicken broth
3/4 cup water
1 medium tomato, peeled, seeded and chopped
4 tablespoons butter
1 large onion, chopped
1 tablespoon butter
1 package (10 ounce size) frozen peas
1/4 cup grated Parmesan cheese, or more to taste
6 slices bacon, cooked crisp, drained and crumbled
salt and pepper, to taste
directions
In a pan, place first 5 ingredients. Cover pan and simmer mixture until liquid is absorbed and rice is tender.
Meanwhile, saute onion in butter until onion is soft. Add the peas and saute for several minutes or until peas are tender.
In the pan with rice, add the onion mixture, cheese, bacon and seasonings and heat through.
NOTE: Casserole can be prepared earlier in the day and stored in the refrigerator. Add a few drops of water when reheating, and stir, now and then to prevent scorching.
