ingredients
8 ounces cream cheese
1/2 cup brown sugar
1 tablespoon white sugar
1 teaspoon vanilla extract
1 cup dry roasted peanuts, chopped, more for rolling
1/2 cup powdered sugar, more as needed
1/3 cup apple juice
1 cup caramel sauce
directions
Soften cream cheese. Mix in sugars and add vanilla. Add nuts. Add powdered sugar; more may be needed, depending on thickness. Cover with plastic wrap and refrigerate until firm enough to shape.
Keep in mind this is very soft but the end result is fabulous.
After refrigerated roll into two balls. Roll balls in additional chopped peanuts then drizzle with caramel sauce.
Serve with apple slices, vanilla wafers and graham crackers.

This was a disaster! The recipe does not say when to add the apple juice so I added it to the cheeseball mix and ended up with soup! Not wanting to give up on it, I put it in the fridge to see if it would set up....no such luck. Any attempts to save this recipe was futile!
