This cheese ball is always a hit! Change it up: instead of one large cheese ball, try rolling the mixture into smaller balls (golf ball sized). Or, roll it in additional crumbled bacon, chopped parsley, or crushed nuts before serving.

2 packages (8 ounce size) cream cheese, softened
1/2 pound finely shredded sharp Cheddar cheese
1/2 cup chopped green onions
6 slices bacon, cooked and crumbled
1 clove garlic, minced
3 tablespoons minced pimiento
3 tablespoons minced fresh parsley
Combine all the ingredients in a bowl and mix well. Form the cheese mixture into a ball and cover in plastic wrap. Place in the refrigerator overnight.
Remove the cheese ball from the refrigerator 15 minutes before ready to serve. Serve with crackers.

I got this recipe from a church cookbook and have been making it for years to the delight of my coworkers. I will say that being a bacon lover, I do increase the bacon to a whole pound and usually leave out the pimento because I don't keep it around the house. My latest change is to keep some of the bacon aside and cook it extra crispy then crush it. Roll the cheese ball in the crushed bacon rather than nuts for an extra burst of bacon-ey goodness!

so easy, quick and yummy. add a tablespoon of worstershire sauce to add that savory flavor and roll it in grinded nuts (walnuts or almonds) for presentation.

Found this recipe in searching for new Superbowl dishes. Made it for my coworkers to test it out. We used it as a bagel spread and they loved it. It's a hit. I doubled the garlic.
