Delicious quesadillas made with fresh spinach, black beans, onion, and cheddar cheese melted inside flour tortillas.

1 cup chopped onion
3 cups torn spinach
4 low-fat flour tortillas (8-inch size)
1 cup canned black beans, rinsed and drained
1 cup shredded reduced-fat cheddar cheese
Lightly grease a large, non-stick skillet and place over medium-high heat.
Add the onion and cook, stirring frequently, for 4 minutes or until soft.
Add the spinach and cook, stirring occasionally, for 1 minute or until the spinach wilts. Remove the spinach and onion from the pan. Wipe the liquid from the pan.
Re-grease the pan and place over medium-high heat. When hot, place one tortilla in the pan. Cook for one minute or until the tortilla is lightly browned.
Top half the tortilla with some of the spinach and onion mixture, black beans, and cheese. Fold the tortilla in half. Cook for 1 minute, then carefully flip the tortilla over and continue cooking until the cheese melts.
Repeat with remaining tortillas.
Serve hot. Can serve with sour cream or other condiments.

I made these because I thought they seemed like a healthy choice for lunch. The black beans tended to roll out the sides, so next time I'm going to try to press down on them to mash the beans a bit once they're finished. Still, they were good.

Fantastic quesadillas! The black bean and spinach mixture is unique and delicious. I added just a sprinkle of salt to the filling but otherwise made it as directed.

I added fresh diced up roma tomatoes and used white cheddar cheese inside and on top of the quesadilla. I finally topped it with avocado. It was delicious.
