ingredients
4 flour tortillas (8 inch size)
olive oil
1 1/2 cup shredded pepper jack cheese
1 green onion, thinly sliced
1/2 cup flaked crab meat, diced cooked shrimp or crawfish
1/4 cup thinly sliced green, red or yellow bell pepper
1 small fresh jalapeno, minced
1 small tomato, diced
guacamole, for garnish
sour cream, for garnish
fresh cilantro sprigs, for garnish
directions
Preheat a griddle or cast iron frying pan until medium hot.
Rub one side of each tortilla with olive oil. Place 2 tortillas, oiled side down, on the hot griddle and evenly top with the cheese, green onion, pepper, shrimp or crab, jalapenos and tomato.
Place the remaining two tortillas on top, oiled side up. Cook until browned on the bottom, 2-3 minutes. Carefully turn the filled tortilla over and brown on the second side, 2-3 minutes longer.
Garnish with dollops of guacamole, sour cream, and cilantro sprigs, if desired. Serve at once. Excellent with mango salsa.
