An easy and tasty oven-baked version of quesadillas made with flour tortillas, Colby/Monterey Jack cheese blend, bacon, and green onions.

4 flour tortillas, (6 inch size)
1 cup shredded Colby & Monterey jack cheese
1/4 cup chopped, cooked, and drained bacon
1/4 cup sliced green onion
Preheat the oven to 400 degrees F. Grease a baking sheet.
Place the tortillas on a work surface. Place 1/4 cup of the cheese on the top half of each tortilla. Add 1 tablespoon of the bacon and one tablespoon of green onion.
Fold the tortillas in half, pressing gently to seal them closed.
Place the folded tortillas in a single layer on the baking sheet. Place the baking sheet in the oven and bake at 400 degrees F for 8-10 minutes or until lightly browned.
Remove from the oven and cut into wedges. Serve hot.

Thanks did them and really good. We also tried to remove bacon and instead added pepperoni slices. Really yummy too.

I loved the simplicity of these! And baking them is so easy (not that quesadillas are difficult in general). There was no flipping involved and the tortillas still got a nice crisp texture to them. I used olive oil spray, not your regular aerosol kind of cooking spray. You could also brush them with oil if you wish. And I probably added more bacon. You can never have too much bacon :)

I added sliced mushrooms, and it was amazing. Easy to make when living on your own.
