Paul Bunyan Chili
INGREDIENTS:
1 pound lean ground beef
1 pound lean ground pork
2 cans (15 1/2 oz size) red kidney beans
1 can (28 ounce size) diced tomatoes
2 large onions, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
3 tablespoons chili powder
2 tablespoons sugar
1 tablespoon crushed red pepper
3 tablespoons red wine vinegar
1 teaspoon cumin
1 cup shredded cheddar cheese, (optional)
DIRECTIONS:
In a 4 quart Dutch oven, brown beef and pork. Drain off fat. Stir in undrained beans, undrained tomatoes, onions,green pepper, garlic, chili powder, sugar, crushed red pepper, wine vinegar, and cumin.
Cover and simmer for 1 hour, stirring frequently to avoid scorching. Serve and top with cheese.
