Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Chili is a great dish to make for a crowd because it is hearty and filling. It can be easily customized to each person's liking, and it is relatively inexpensive to make. Chili also freezes well, so leftovers can be saved for another meal.
10 pounds ground beef
5 large onions, peeled and diced
5 quarts tomato juice
4 cups water
5 cans (16 ounce size) kidney beans, rinsed and drained
1/3 cup sugar
2/3 cup chili powder, or to taste
1 tablespoon salt
1 bunch celery with leaves, slice the stalks and reserve the leaves
5 cloves garlic, peeled and just slightly crushed
3 bay leaves
salt and pepper, if needed
Brown the ground beef and onion, in batches, in a large Dutch oven over medium-high heat. Cook, stirring frequently, until the meat is no longer pink. Drain off any excess grease.
Add the tomato juice, water, kidney beans, sugar, chili powder, salt, and sliced celery. Mix well.
Combine the celery leaves, garlic, and bay leaves in a square of cheesecloth. Tie the cheesecloth shut with kitchen twine and place the sachet in the chili.
Bring the chili to a boil then reduce the heat to a low simmer. Let cook, covered, for 2 hours.
Remove the sachet of spices before serving. Adjust the seasoning with salt, pepper, and/or more chili powder.
Serve the chili with any desired toppings or additions such as sour cream, grated cheese, crackers, biscuits, etc.
Large Dutch Oven: For browning the ground beef and onions in batches, and then combining all the ingredients to simmer together.
Cheesecloth: To wrap the celery leaves, garlic, and bay leaves to create a sachet of spices to infuse the chili with flavor.
Kitchen Twine: Used to tie the cheesecloth containing the celery leaves, garlic, and bay leaves securely, making sure the spices don't escape into the chili.
Serving Bowls and Spoons: For serving the chili to a large crowd.

We had a big camping retreat last weekend and had to feed 40 people. This recipe came in very handy. I browned the ground beef and onions at home, combined the tomato juice and bean mixture into zipper bags, and prepared the cheesecloth mixture ahead of time. At the campsite I set up two large dutch ovens and cooked this over the campfires while we set up camp. Dinner was ready by the time everything was set up. It turned out great! Everyone loved it and I was really happy with the flavors.
