This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

There's nothing not to like here. Macadamia nuts, ice cream, hot fudge, cool whip... All that in one pie. If you can find some macadamia nut ice cream it really makes a difference but vanilla will suffice.

1 (9-inch size) chocolate cookie crumb crust
1 quart macadamia nut ice cream, softened
1 jar (12 ounce size) hot fudge ice cream topping
1 container (8 ounce size) Cool Whip, thawed
1 jar (3 ounce size) macadamia nuts, chopped
Spread the softened ice cream in the cookie crumb crust. Place the pie in the freezer and freeze until firm (about 2 hours).
Remove the pie from the freezer. Spread the pie with the Cool Whip then drizzle with the hot fudge ice cream topping. Sprinkle with the chopped macadamia nuts then serve immediately.

I couldn't find macadamia nut ice cream - went to FOUR stores. So, I got vanilla and chopped up some macadamia nuts. No idea if that's close to how the ice cream is supposed to be or not. Overall the pie was good but next time I will just sprinkle some chopped macadamias on top instead of trying to mix it in the ice cream.

Searching online for the recipe after going to Jake's in San Diego and Kimos in Maui, this is probably the closest recipe I have found. Real Macadamia nut ice cream, not just vanilla like many imitators say. The key, though, I would imagine would be to find really thick fudge to top the macadamia nut ice cream. I asked our server who went back and checked for the brand. J. hungerford smith hot fudge topping. This makes all of the difference in my mind! Thanks for the close recipe :)
