Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Pineapple Coconut Granita

ingredients
3/4 cup boiling water
1/2 cup sugar
1/4 cup cream of coconut
1 tablespoon lime juice
1 pinch ground nutmeg
1 can (16 ounce size) pineapple chunks (packed in juice)
directions
In a small bowl, mix the water, sugar and cream of coconut. Stir until the sugar is dissolved. Cool to room temperature. Stir in the lime juice and nutmeg.
Process the pineapple (with juice) in a blender until smooth. Add the coconut mixture and blend well.
Transfer to a large, shallow plastic container with a tight-fitting lid. Place in the freezer until the granita is frozen solid.
Think ahead: The granita keeps well in the freezer for a few days so you can make it well ahead. Allow it to stand at room temperature for a few minutes before scooping it out and serving it.
