It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

- #3072

2-5 hrs
ingredients
1/2 cup unsalted butter, room temperature
2 cups (packed) grated Cheddar cheese
1/2 cup whole milk
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
3 cups fine fresh bread crumbs made from French bread
1 1/2 cup all-purpose flour
coarse salt
Parmesan cheese, freshly grated
sesame seeds
directions
Using electric mixer, beat butter in large bowl until light. Beat in cheese, then milk, paprika, salt and cayenne. Add bread crumbs and flour and beat to blend.
Divide dough into 4 equal pieces; shape each into rectangle. Wrap separately in plastic and chill at least 2 hours.
Preheat oven to 350 degrees F.
Roll out 1 dough piece (keep remainder chilled) between sheets of parchment to 10x5-inch rectangle (about 1/8-inch thick). Using large knife, cut dough into 5-inch long by 1/2-inch wide strips. Working quickly and using metal spatula as aid, transfer dough strips to ungreased baking sheets, spacing 3/4 inch apart. Sprinkle with coarse salt, Parmesan and sesame seeds.
Bake dough strips until golden brown, about 20 minutes. Using metal spatula, transfer cheese straws to racks and cool.
Repeat with remaining dough pieces. (Can be prepared 1 day ahead. Cool completely. Store in airtight container at room temperature.)
