Brandy Peach Cake With Brown Sugar Glaze Recipe

Ingredients:
***Ring Cake***
1 cup butter
1 cup packed brown sugar
3 eggs
1 can (16 ounce size) peach halves, drained and chopped
3/4 cup milk
2 tablespoons brandy
2 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
***Glaze***
1/2 cup confectioners' sugar
2 tablespoons packed brown sugar
3 1/2 teaspoons milk
Directions:
Preheat oven to 350ºF. Grease and flour 12-cup fluted ring pan. Set aside.
In large mixing bowl cream butter, brown sugar and eggs. Add peaches, milk, brandy, flour, cinnamon, baking powder, baking soda and salt. Beat at low speed of electric mixer until blended, scraping bowl constantly. Beat at medium speed for 2 minutes, scraping bowl occasionally. Pour into prepared pan.
Bake at 350ºF for 50 to 55 minutes, or until wooden pick inserted in center comes out clean and center springs back when touched lightly. Cool on wire rack for 5 minutes. Invert onto serving dish. Cool completely.
For glaze, in small mixing bowl confectioners' sugar and brown sugar. Stir in milk, 1 teaspoon at a time until glaze is smooth and of desired consistency. Drizzle over cooled cake.
