Rhubarb cake is a dessert that is perfect for any occasion. The moist and fluffy cake is filled with fresh rhubarb and topped with a cinnamon sugar topping.

ingredients

1 1/2 cup raw rhubarb, cut fine
1 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup butter or margarine
1 cup applesauce
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon vanilla extract
2 cups flour

Topping

1/4 cup sugar, MIXED WITH
1 teaspoon cinnamon

directions

In large mixing bowl, cream sugars and butter, add egg and salt. Stir in applesauce, soda, vanilla, and flour. Add rhubarb.

Pour in prepared 9- x 13- x 2-inch baking pan and sprinkle topping mixture. Bake at 375 degrees F for 30 to 35 minutes. The cake is very moist and needs no frosting.
