Warm Asparagus Spinach Pasta Salad With Cashews

ingredients
1 1/2 pound fresh asparagus, trimmed and cut into 1" pieces
2 tablespoons olive oil PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/2 cup olive oil, divided
1/4 teaspoon salt
1 pound uncooked penne pasta
3/4 cup chopped green onions
6 tablespoons white vinegar
2 tablespoons soy sauce
1 package fresh baby spinach
1 cup coarsely chopped cashews
1/2 cup shredded Parmesan cheese
directions
Place asparagus in a rectangular baking dish and sprinkle with 2 tablespoons olive oil. Sprinkle with salt then bake uncovered at 400 degrees F for 10 minutes, stirring every 5 minutes.
Meanwhile, cook pasta according to package directions then drain.
For dressing, combine onions, vinegar and soy sauce in a blender then cover and process. While processing, gradually add remaining oil in a steady stream.
In a large salad bowl combine pasta, spinach and asparagus. Drizzle with dressing then toss to coat. Sprinkle with cashews and parmesan cheese then serve immediately.
