Slow Cooker Chicken Pasta Salad

ingredients
3 whole chicken breast
water, to cover
1 stalk celery, chopped
1/2 large onion, chopped
1/2 teaspoon salt
1/8 teaspoon black peppercorns
6 ounces dried pasta, of choice
1/2 cup oil
1 tablespoon sesame oil
1/3 cup light soy sauce
1/3 cup rice vinegar
3 tablespoons sugar
1/4 teaspoon black pepper
1/2 teaspoon ground ginger
1/4 cup chopped parsley
1/3 cup sliced green onions
6 cups fresh spinach
1/4 cup toasted sesame seeds
directions
Cut chicken breasts in half and place in the slow cooker. Cover with water and add celery, onion, salt and peppercorns. Set on low and cook 5-6 hours.
When chicken is cooked thoroughly, remove and let cool. Cut into chunks or shred.
Cook dried pasta al dente.
Combine the oil, sesame oil, soy sauce, rice vinegar, sugar, pepper, and ground ginger to make the dressing.
Toss together the chicken, spinach, and pasta. Combine with the dressing and toss again. Stir in the parsley and green onions. Top with toasted sesame seeds.

Pasta and succulent poached chicken are very tasty together. This salad stores well and is great for picnics.
