Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I made this for 120 people and everybody raved over it! It was very easy to make, but I wasn't sure what size Italian dressing to use; the recipe only says "large" bottle. I ended up using 2 regular-sized bottles of dressing.
