Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I made this dish exactly as written and it was very good. I used fat free dressing so it was also a healthy dish.

Loved this recipe, my husband wanted me to make something like the tomato cucumber salad at the restaurant Sbarro, and says this is just like it. I did substitute red onion instead of green onion, and instead of layering, I just mixed it all together, and thought it was great!
