Spicy Cucumber Salad With Thai Basil And Sesame Seeds

ingredients
3 medium cucumbers, cut into 1/4 inch slices
OR
2 European cucumbers, cut into 1/4 inch slices
1 tablespoon salt
1 tablespoon toasted sesame seeds
Dressing
1 tablespoon soy sauce
3 tablespoons rice vinegar
1 tablespoon Thai chili garlic paste or any Asian style hot chile sauce
1/2 teaspoon minced garlic
1 tablespoon sugar substitute or sugar
3 tablespoons Asian sesame oil
1 tablespoon finely chopped Thai or regular basil
directions
To prepare the cucumbers, sprinkle with salt and set aside for at least 30 minutes to extract water.
To prepare dressing, whisk together soy sauce, rice vinegar, garlic paste, garlic, sweetener, and sesame oil. Stir in chopped basil. Let sit at room temperature so flavors will blend.
After desired amount of water has been released from cucumbers, wipe with paper towels and place in plastic bowl.
Stir in dressing, enough to coat cucumbers. Sprinkle with sesame seeds.

I was craving a tangy, spicy Thai salad and this hit the spot! And it was easy. I substituted Sriracha for the Thai chili paste and regular basil for the Thai basil. It was pretty spicy! I'll definitely make this again. The dressing could be used on a green salad too.

this was great especially as an "adult" dish. use a blender to emulsify the dressing if possible. Also do the salt/cucumber mixture for at least and hour stirring occasionally. Then drain and squeeze dry with paper towels.

I quadrupled this recipe and took it with me to a barbecue. Several people commented over and over about how much they loved this salad. It was perfectly spicy for my taste. My only caution is to be sure to wipe off the salt really well--some bites seemed a little to salty to me. Also, a lot of the dressing ended up in the bottom of the bowl. Perhaps you could make a little less of the dressing or try to repurpose the excess.
