2 tablespoons lime juice, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 teaspoons lime juice
1 tablespoon cooking oil, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 tablespoon cooking oil if needed
4 cloves garlic, minced
3/4 teaspoon ground ginger
3 boneless, skinless chicken breast halves
1/2 cup chunky peanut butter, preferably natural
1 cup canned low-sodium chicken broth or homemade stock
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon dried red pepper flakes, or to taste
3/4 pound spaghetti
3 scallions including green tops, chopped
1/3 cup chopped peanuts (optional)
directions
In a medium pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes.
Meanwhile, combine all ingredients except the chicken, spaghetti, scallions and chopped peanuts.
Drain the pasta and toss with the peanut sauce, chicken and scallions. Top with the chopped peanuts, if using.
