Whipped Peanut Butter

If you want to avoid all the sugar and other nastiness packed into lots of commercial peanut butter jars, making your own is the way to go. Starting with fresh peanuts gives you the freedom to make exactly what you want.

1 pound natural peanut butter or fresh ground peanuts
2 tablespoons olive oil
Stevia or other sweetener

directions

Place the peanut butter in a deep mixing bowl. Beat on low speed with a mixer. Very slowly add the olive oil with the mixer running and mix until incorporated, scraping down the sides of the bowl as needed. Mix in sweetener as desired.

Increase the mixer speed to medium-high and beat until the peanut butter is light and creamy. Store the whipped peanut butter in an airtight container in the refrigerator.

cook's notes

if using fresh ground peanuts, puree them in a food processor before using.

    This peanut butter is great! To the person who said it wasn't like Jif - thank goodness it's not! This is so much better. I added a little honey for the sweetener. Delish! It is work and messy as someone else mentioned but much better knowing what goes into your food.

    I actually went through the effort of grinding fresh peanuts for this and it was totally worth the mess and work! This is the best peanut butter I think I've ever had. Once you try this you will be amazed by how chemically commercially made peanut butter tastes. This is amazing!

    My peanut butter didn't end up quite as fluffy as I expected, but the taste was great and with so many fewer calories than regular peanut butter, who could complain?
