Cranberry, Feta and Roasted Walnut Salad Recipe

INGREDIENTS:

1 package (10 ounce size) mixed salad greens
1 cup sweetened dried cranberries
1 package (4 ounce size) crumbled feta cheese
1/2 cup coarsely chopped toasted walnuts
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon ground black pepper
1/4 cup extra virgin olive oil


DIRECTIONS:

Layer salad greens, cranberries, cheese and walnuts in shallow salad bowl or on large serving platter. Whisk vinegar, honey, mustard and pepper in small bowl. Slowly add oil in a thin stream, whisking constantly until well blended. Pour over salad. Toss gently to coat. Serve immediately.

One of my favorite salads! It is so easy to make and it was a hit at the Holiday party I took it to a few weeks ago. The dressing makes it all come together. I've doubled the recipe for big gatherings, but have also made it as a small salad for one.

I made this salad for a group of friends at my Marina a few days ago. While I was chopping walnuts and putting the dressing together on the picnic table, my husband was grilling the Delmonico Steaks on the grill. A fabulous (winter) salad! The blend of flavors and texture is unique - sweet & 'sharp' while also crunchy and soft. - I've made with red leaf lettuce- really superb.

I love this recipe (and it was a big hit at a number of potlucks). The best part about it is the salad dressing. I make it all the time and have it on salads weekly. It is my husbands and my favorite salad dressing.

Mimi's cafe offers a similar salad and they include sliced strawberries. I imagine this ingredient would go just as well with this recipe (adding to the sweetness and overall nutrition).
