Hawaiian Pineapple Chicken With Macadamia Nuts

ingredients
3 tablespoons vegetable oil
2 cups cooked, boned chicken, cut into small chunks
1/2 cup scallions, finely sliced
1/2 cup celery, diced
2 tablespoons soy sauce
1/2 cup macadamia nuts, or brazil nuts, chopped
1/2 teaspoon sugar
1/2 cup chicken stock
1 cup fresh pineapple, cut in chunks
directions
Heat oil in wok, or skillet, and saute chicken, scallions and celery for 3 minutes. Stir in soy sauce, nuts, sugar and chicken stock. Cover and simmer for 5 minutes.
Add pineapple and simmer another 3 minutes.

This is my favorite pineapple chicken recipe because it's not overly sweet and doesn't have a syrupy sauce on it. I also love macadamia nuts so I look for any excuse to use them in a recipe. My sister makes this same recipe but she likes a sweeter recipe so she uses some pineapple juice in place of some of the chicken stock and then thickens it.
