Saucy Honey Mustard Pineapple Chicken Over Rice

ingredients
4 boneless skinless chicken breast halves
1 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon vegetable oil
1 can (20 oz. size) unsweetened sliced pineapple
1 tablespoon cornstarch
1/4 cup Dijon mustard
1/4 cup honey
2 cloves garlic, minced
hot cooked rice
directions
Sprinkle chicken with thyme, salt and pepper. In a skillet, brown chicken in oil.
Meanwhile, drain pineapple, reserving the juice. Cut pineapple rings in half and set aside. Combine cornstarch and 2 tablespoons juice until smooth; set aside.
Combine mustard, honey, garlic and remaining pineapple juice; mix well. Add to pan; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until chicken juices run clear. Remove chicken and keep warm.
Stir cornstarch mixture and add to pan; bring to a boil. Boil and stir for 2 minutes. Return chicken to pan. Top with pineapple; heat through. Serve over rice.

As it happened, the package of skinless boneless chicken breats contained five, and the quantities in this recipe worked out fine. I enjoyed the use of the herb ground thyme. The sauce was very nice. Possible changes I would make might be to heat it up by using red pepper flakes. I think it is tangy enough that most people would enjoy the meal. I think children will eat this, even if it does contain mustard! I rarely do chicken with a sweet sauce, so this made for a nice change. Thanks for submitting it.

This dish was delishious! My roommate and I had it with white rice and freshly diced peas and carrots. Reminds me of Chinese orange chicken or sesame chicken, but with pineapple. Highly recommended for a Thursday evening dinner.

This recipe is the absolute best! We have it at least once a month and always make enough for plenty of leftovers. Really yummy!
