Caribbean Chicken with Pineapple And Bananas

ingredients
4 pieces chicken
1 large red bell pepper, cored, deseeded, chopped
1 teaspoon curry powder
1 cup chicken stock
salt and fresh ground black pepper to taste
4 pineapple rings, fresh or canned
1 banana
1 orange, peeled and sliced
directions
Put the chicken portions in a casserole dish with the chopped pepper and curry powder. Pour over the stock and add salt and pepper.
Cover and cook in a preheated hot oven at 425 degrees F for 50 minutes.
Chop the pineapple rings and banana and add to the casserole. Cook for a 10 minutes or until the chicken is tender.
Garnish the casserole with the orange slices.

Hi there, Great recipe! I made it for my mother and myself but I added a few things; I put twice as much curry in the mix (only used 2 large bone-in chicken breasts), added half a container of sour cream, and half an onion in rings, and also during cooking I basted the chicken twice before putting the pineapple and banana on. Delicious! :)
