crock pot notes
Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.
recipe tips
Add fresh herbs like parsley or thyme for a burst of fresh flavor.
If you prefer a stronger mushroom flavor, add a splash of mushroom broth or soy sauce.
Check the chicken for doneness by making sure it reaches an internal temperature of 165 degrees F.
If you prefer a thicker sauce, you can remove the cooked chicken and mushrooms and reduce the sauce on the stove before serving.
To make it a one-pot meal, toss in some cooked pasta during the last 30 minutes of cooking to absorb the flavors of the sauce.
common recipe questions
Can I use boneless chicken breasts instead of bone-in?
Yes, boneless chicken breasts can be used instead of bone-in, but they will cook faster, so adjust the cooking time accordingly.
How can I make the sauce thicker?
To thicken the sauce, you can add a cornstarch slurry (a mixture of cornstarch and water) to the crock pot during the last 30 minutes of cooking.
Can I add other vegetables to the dish?
You can add additional vegetables like bell peppers, onions, or carrots to the crock pot, just adjust the cooking time as needed.
How should I store leftovers?
Store any leftover mushroom chicken in sour cream sauce in an airtight container in the refrigerator for up to 3-4 days.
Can this dish be frozen?
You can freeze the cooked mushroom chicken in sour cream sauce for up to 2-3 months. Thaw in the refrigerator before reheating.
How can I reheat the leftovers?
Reheat the leftovers gently in the microwave or on the stove over low heat to prevent the sauce from separating.

Button mushrooms are the most commonly used in a recipe like this but you can use portobello, cremini, shiitake, etc.

Other Alcohol Pairings
Vodka Martini: The clean, neutral taste of a vodka martini can act as a palate cleanser between bites.
Gin and Tonic: The botanical notes in gin can complement the earthy flavors of the mushrooms, while the tonic water can provide a slight bitterness that balances out the creamy richness of the sauce.
Dark and Stormy: The spicy kick of ginger beer in a Dark and Stormy can add some excitement to each bite of the creamy chicken dish.
Non-Alcoholic Pairings
Lemonade: A tall glass of lemonade can bring a burst of citrusy freshness to each bite, cutting through the richness of the sour cream sauce.
Sparkling Water: It's a simple and straightforward choice for a non-alcoholic pairing.

The cooking time will be about the same for bone-in chicken thighs. Just make sure to check the chicken for doneness using a meat thermometer.

Very good and very easy. Added 2 cups cooked egg noodles before serving. Would leave out the lemon pepper seasoning next time.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
