It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

- #73923
30-60 minutes
ingredients
4 bone-in chicken thighs, with skin
1/2 teaspoon Creole or Cajun seasoning
1 tablespoon olive oil
2 cans (14.5 ounce size) diced tomatoes, plain or flavored (such as with onions, celery and green peppers)
1 package (16 ounce size) frozen cut okra
directions
Remove chicken skin, if desired. Sprinkle each side of chicken pieces with Creole or Cajun seasoning.
Heat oil in a large pot over medium-high heat; add chicken. Cook, turning occasionally, 15 minutes or until golden brown. Remove from pan and set side.
Add tomatoes (undrained) and okra (unthawed) to pot; mix well, scraping bottom of pot to collect any brown bits.
Return chicken to pan and spoon sauce over chicken. Cover and cook, 15 minutes or until chicken reaches 180 degrees on a meat thermometer.
Serve with rice and/or cornbread, if desired.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
