- #81034
under 30 minutes
ingredients
2 boneless, skinless chicken breast halves
Cajun seasoning
1 can cream of chicken soup
1/2 cup water
1 can (4 ounce size) chopped mild green chiles
1 teaspoon lemon juice
1/4 cup sour cream
cooked rice
directions
Sprinkle chicken generously with Cajun seasoning. Cook in a non-stick skillet over medium heat until no longer pink inside.
Meanwhile, combine the soup, water, chiles and lemon juice. Stir until smooth and mixed well. Add the soup mixture to the skillet. Bring to a boil, then reduce heat to low and let simmer for about 10 minutes. Stir in sour cream until well mixed. Do not let it boil at this point, but just keep it on the heat long enough to warm the sour cream.
Serve over rice.
