A simple combination of mayonnaise, Dijon mustard, and herb stuffing creates a flavorful crust on chicken breasts. Quick preparation with just a few ingredients makes this chicken dish an easy weeknight option.

1 cup light mayonnaise
1/2 cup margarine, melted
3 tablespoons Dijon mustard
3 pounds chicken breast, boneless and skinless
1 package (16 ounce size) herb stuffing mix
Mix the mayonnaise, margarine and mustard. Put herb stuffing in blending and process into fine crumbs. Wash and pat dry chicken breast and dip each breast into mayonnaise mixture then roll in crumbs.
