1 cup light mayonnaise
1/2 cup margarine, melted
3 tablespoons Dijon mustard
3 pounds chicken breast, boneless and skinless
1 package (16 ounce size) herb stuffing mix
Mix the mayonnaise, margarine and mustard. Put herb stuffing in blending and process into fine crumbs. Wash and pat dry chicken breast and dip each breast into mayonnaise mixture then roll in crumbs.
Place in a shallow ungreased baking dish and cover with foil and bake for 1 hour at 350 degrees F. Remove foil during the last 10 minutes to brown.
