Chicken And Apple-Pecan Stuffing

ingredients
4 boneless, skinless chicken breast halves
3 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped celery
1 cup chopped apple
1/3 cup applesauce
1/4 cup chopped pecans
1 box (6 ounce size) stuffing mix
1/2 cup water
1 can cream of chicken soup (low fat is fine)
directions
Wash chicken breasts and pat dry; place in crock pot.
Melt the butter in a skillet over medium-low heat and saute the chopped onion, celery, and apple. Add pecans, water, applesauce, cream of chicken soup, and stuffing mix. Mix together; spoon over chicken in the crock pot.
Cover and cook on LOW for 6 to 8 hours.

This is good, but 6-8 hours is WAY too long. It will be over-done and dry if you cook it that long. I've found that 5 hours on low is the correct cooking time. If you cook that way, it is very tasty!
The time needed will depend on your crock pot - many of the newer ones cook at much higher temps than the older models do. This recipe was most likely developed using an older model.
