Stuffed peppers are a classic dish that can be made with a variety of different ingredients. This recipe uses ground beef and frozen Spanish rice for a simple and delicious way to make them.

4 bell peppers 1 pound ground beef 1 package (16 ounce size) frozen Spanish rice, cooked as directed on package 1/4 cup ketchup
directions
Preheat the oven to 375 degrees F.
Bring a large pot of water to a boil. Slice the tops of the peppers off and remove the seeds. Place the peppers in the boiling water and let simmer for 5 minutes. Remove with a slotted spoon and set aside to drain.
Meanwhile, in a large skillet over medium high heat, brown the ground beef. Drain off any excess grease.
Stir in the prepared Spanish rice and ketchup and mix well.
Evenly spoon the beef mixture into the pepper shells. Place the peppers cut-side up in a baking dish. Place the dish in the oven and bake at 375 degrees F for 20 minutes.
If desired, top the peppers with shredded cheese and return to the oven until the cheese melts.
