This recipe for stuffed green peppers uses bread crumbs instead of rice to make the ground beef filling.
6 medium green bell peppers
1 pound ground beef
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon black pepper
1 can (8 ounce size) tomato sauce
1 cup soft bread crumbs
1 cup grated cheese
Preheat the oven to 350 degrees F.
Bring a large pot of water to a boil over medium-high heat. Slice the tops off the bell peppers and remove the seeds. Place the peppers in the boiling water and cook for 5 minutes or until slightly soft. Remove with a slotted spoon and let drain.
Heat a skillet over medium-high heat. Add the ground beef and onion and cook, stirring frequently, until the beef is no longer pink. If desired you can remove the stem from the top slice of the bell peppers and chop the flesh and add to the skillet with the onion. Drain off any excess grease. Stir in the salt, pepper, tomato sauce, and bread crumbs.
Fill the peppers with the ground beef mixture and place upright in a baking dish. Add a little water to the bottom of the dish.
Top the peppers with the grated cheese. Place in the oven and bake at 350 degrees F for 40 minutes or until the peppers are soft and the cheese is melted.
Serve the baked stuffed green peppers hot.

I modified this just a little. I used tomato soup instead of the tomato sauce because that's what I had. I used cooked rice instead of the breadcrumbs and added some hot sauce. I also covered them while cooking so the peppers get softer. I added the cheese at the end and let it melt.

I made this awesome dish with a couple substitutions. I used pasta sauce in place of the tomato sauce and I used Italian seasoned bread crumbs in place of the bread crumbs. It calls for grated cheese but does not specify what kind, I used mozzarella...It turned out GREAT! I also put the left over pasta sauce in the bottom of the pan in place of water..just a small amount works to keep the peppers from sticking.

My partner and I never ate stuffed bell pepper before, but this recipe has made them a favorite. Simple, filling and so very delicious.

I pretty much just used the temps and times for this dish- I made dirty rice, mixed in homemade meat sauce and oven roasted garlic. Never be afraid to experiment...

This turned out quite nicely - I didn't think it was too difficult to make. We put smashed potatoes and bread with it as sides and it made for a nice meal. One thing: the directions call for adding garlic, which is not listed in the ingredients... Also, I would have liked more guidance on how much water to put in the pan while they are baking.
