It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Chicken Cordon Bleu Pasta

ingredients
2 pounds boneless, skinless chicken breast halves
1/2 cup seasoned bread crumbs
1 egg
1/2 cup milk
8 ounces Swiss cheese, cubed
8 ounces ham, diced
1 can cream of chicken soup
1 cup milk
2 cups favorite pasta
Parmesan cheese, for garnish
directions
Cut chicken into chunks. Beat egg with the 1/2 cup milk. Dip chicken in egg and milk mixture, then into bread crumbs, coating well. Brown in a little oil until golden.
Place chicken chunks in a baking dish, then add Swiss cheese and ham. Mix cream of chicken soup with 1 cup of milk. Mix well.
Pour over all. Bake for about 30 minutes at 350 degrees F or until bubbly.
Boil your choice of pasta shapes (penne pasta is excellent for this). Drain and toss with the chicken mixture.
Garnish with Parmesan cheese.
